Stuffed Pepper
Ingredients
- 1 cup brown rice
- 4 green bell peppers
- 16 oz tomato sauce
- 1 cup cheddar cheese
- ½ cup black beans optional
- 1 onion
- 16 oz ground beef
- 2 cloves garlic minced
- salt/pepper
Preparation Instructions
- Boil 2 cups of water, add 1 cup of brown rice.
- Chop onions and grate cheddar cheese.
- Saute onions in 1-2 tbsp of olive oil over medium high heat. Add garlic and ground beef. Cook until not pink, add tomato sauce, black beans are optional, and salt and pepper.
- Once both are cooked, combine rice and beef mixture in one pot. Cut open the pepper removing the seeds and the core.
- Stuff peppers with rice and ground beef mixture, and sprinkle with cheddar cheese.
- Put in the oven for 20 minutes, till the cheese is melted and pepper is cooked, and enjoy!
