Lentil Loaf
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 medium carrot, dice small
- 1 ½ cup walnuts (optional)
- 1 ¾ cups of lentils
- 2 tbsp ketchup
- 2 tbsp soy sauce
- ½ tsp salt
- 1 tsp dried thyme
- ½ cup breadcrumbs
Toppings
- ½ cup ketchup
- 1 tbsp pure maple syrup
- 1 tsp soy sauce
- Side salad (optional)
Preparation Instructions
- Preheat the oven to 350 degrees and line a loaf pan with parchment paper or spray pan with cooking spray.
- Heat a large pot over medium heat, add olive oil, onions, and carrots, stir often for about 5 minutes until veggies are softened.
- In a large bowl mix together lentils, soft vegetables, ketchup, soy sauce, salt and dried thyme. Mix well with a wooden spoon.
- Add ½ cup of breadcrumbs and fold them in, add ¼ more breadcrumbs if the mixture is too wet.
- Transfer to the pan and press it evenly in and firmly, then cover with foil and cook in the oven for 30 minutes.
- Make the topping while waiting, stir all ingredients together in a small bowl
- After 30 minutes spread the topping on top of the loaf and cook for 10 more minutes and then let it cool for 20 minutes and enjoy!
