
Tomato Vegetable Soup
Ingredients
- 1 tbsp olive oil
- ½ yellow onion, chopped
- 1 carrot, chopped
- ½ cup green beans, chopped
- 1 tsp dried oregano
- ½ tsp dried basil
- ¼ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 can (28oz) no salt added crushed tomatoes
- 2 cup vegetable stock
- 2 cup water
- 2 cup whole wheat rotini pasta
- 5 small red skin potatoes cut into medium small pieces
- (Optional: Substitute more veggies for pasta) (can add any veggies you want)
Preparation Instructions
- In a large pot on medium and add oil and onion till it is clear, approx. 5 minutes.
- Add carrot, potatoes, green beans, oregano, basil, garlic powder, salt and pepper, stir once added. Add tomatoes, vegetables stock, water and pasta. Increase heat to medium high until boil, make sure to stir often.
- Reduce heat and simmer for 15-20 minutes, stir occasionally till pasta is cooked. Once done poor in a bowl and enjoy!
