The Amalfi Coast seduces us with art, narrow streets, and contrasting colors between its blue sea, the green of its trees, and the bright yellow of its fragrant lemons. In this class, Chef Alba will prepare, and we will enjoy recipes with fresh lemons in all of our dishes. You will receive a recipe and prep instructions ahead of class time. Menu: Burrata Cheese with Caramelized Lemon and Pistachios, Patate Croccante al Limone, Polpette (Meatballs) al Limone and for dessert Lemony Lemon Fluff in a Glass.

You’ve heard “you are what you eat,” but did you know your food directly impacts your mood? You may not realize that your fast food meal impaired your ability to feel joy, or that a good workout can be as helpful as medicine to your mental well-being. This course will cover the role of chronic inflammation in mental health and the benefits of anti-inflammatory foods. We will learn how nutrition has an effect on underlying anxiety, mood, appetite and sleep. You will examine the latest scientific research on what foods and vitamins are beneficial and which can suppress your body’s natural ability to regulate mood. Instructor: Bonnie Pace

Pasta is an essential and irresistible staple in traditional Italian cuisine. The methods of preparing pasta sauces are countless. Chef Alba will demonstrate her personal recipes to create fantastic and versatile pasta sauces for any occasion. The key to a good sauce is fresh, few, and quality ingredients, and easy technique to follow. You will receive a recipe and prep instructions ahead of class time. Menu: Lemon Carbonara, Pesto Genovese e Faggiolini, Fresh Tomatoes and Golden Breadcrumbs, and Ricotta and Toasted Walnuts.

Greek cuisine is recognized for its frugality and its richness of flavors and aromas, and famous for its custom of cooking with the day’s freshest and locally grown ingredients. Join Chef Alba as she prepares her adaptation of traditional and delectable Greek dishes. You will receive a recipe and prep instructions ahead of class time. Menu: Pork Tenderloin Souvlaki, Fasolakia (Green Beans in Tomato Sauce), Tomato Rice with Feta, and for a touch of sweet Pan-Fried Feta in Sesame Seed and Honey.

St. Valentine’s Day is a time to celebrate and remember loved ones. For this occasion, Chef Alba has selected an easy and romantic menu. Join us with your significant other, friend or family member to create and enjoy these delicious dishes. You will receive a recipe and prep instructions ahead of class time. Menu: Mozzarella in Crème Fraiche, Pork Medallions in Chocolate and Balsamic Sauce, Creamy Spinach in White Wine and for dessert Strawberries in Marsala Wine.
