Peanut Butter Cookies

Ingredient

Amount

Butter or butter and shortening

12 oz.

Brown sugar

8 oz.

Sugar

8 oz.

Salt

1 tsp

Peanut butter

12 oz.

Eggs

4 oz.

Pastry flour

1 lb.

Baking soda

1 tsp

  1. Blend fats to a homogenous mixture
  2. Add peanut butter blend to a homogenous mixture
  3. Add salt and sugar beat until fluffy
  4. Add eggs in increments, scrape between additions
  5. Add sifted dry ingredients, just to incorporate

Optional

  • After portioning use a wet fork to make light indentations to garnish
  • Lightly brush with egg whites to create a shine
  • Cashew or almond butter can be substituted for the peanut butter
