Cheese Souffle
Ingredients:
3 eggs
1 oz. butter
1/2 oz. flour
1/4 pint milk
3 oz. grated cheese
salt, pepper, nutmeg to taste
- Melt butter, stir in flour, cook briefly, add milk gradually stirring well, and cook till boiling
- Cool slightly; add egg yolks, salt, pepper, nutmeg and cheese. Mix well.
- Whisk egg whites stiff
- Fold lightly into cheese mixture, pour into buttered soufflé dish, smooth the top.
- Bake at 375 degrees for about ½ hour, serve immediately
*Any type of cheese will work, but a strong flavored is preferred
