Cheese Souffle

Cheese Souffle

Ingredients:
3 eggs
1 oz. butter
1/2 oz. flour
1/4 pint milk
3 oz. grated cheese
salt, pepper, nutmeg to taste 

  1. Melt butter, stir in flour, cook briefly, add milk gradually stirring well, and cook till boiling
  2. Cool slightly; add egg yolks, salt, pepper, nutmeg and cheese. Mix well.
  3. Whisk egg whites stiff
  4. Fold lightly into cheese mixture, pour into buttered soufflé dish, smooth the top.
  5. Bake at 375 degrees for about ½ hour, serve immediately

*Any type of cheese will work, but a strong flavored is preferred
